DescriptionDextrin, also known as british gum or caloreen, belongs to the class of organic compounds known as oligosaccharides. These are carbohydrates made up of 3 to 10 monosaccharide units linked to each other through glycosidic bonds. Dextrin is an extremely weak basic (essentially neutral) compound (based on its pKa). Dextrin exists in all eukaryotes, ranging from yeast to humans. Dextrin is found, on average, in the highest concentration within rices and arabica coffee. Dextrin has also been detected, but not quantified in, beers and tea. This could make dextrin a potential biomarker for the consumption of these foods.
