DescriptionEpicatechin 3-glucoside, also known as epicatechin 3-O-beta-D-glucopyranoside, is a member of the class of compounds known as flavonoid-3-o-glycosides. Flavonoid-3-o-glycosides are phenolic compounds containing a flavonoid moiety which is O-glycosidically linked to carbohydrate moiety at the C3-position. Epicatechin 3-glucoside is slightly soluble (in water) and a very weakly acidic compound (based on its pKa). Epicatechin 3-glucoside can be found in chinese cinnamon and herbs and spices, which makes epicatechin 3-glucoside a potential biomarker for the consumption of these food products.
