DescriptionCyanidin 3-(caffeoyl-sophoroside) 5-glucoside belongs to the class of organic compounds known as anthocyanidin-5-o-glycosides. These are phenolic compounds containing one anthocyanidin moiety which is O-glycosidically linked to a carbohydrate moiety at the C5-position. Cyanidin 3-(caffeoyl-sophoroside) 5-glucoside has been detected, but not quantified in, sweet potatos (Ipomoea batatas). This could make cyanidin 3-(caffeoyl-sophoroside) 5-glucoside a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on Cyanidin 3-(caffeoyl-sophoroside) 5-glucoside.
