Secondary alcohols are compounds containing a secondary alcohol functional group, with the general structure HOC(R)(R') (R,R'=alkyl, aryl). 1-Hexen-3-ol is an ethereal, green, and rum tasting compound. 1-Hexen-3-ol has been detected, but not quantified in, several different foods, such as lemons (Citrus limon), black tea, green tea, herbal tea, and red tea. This could make 1-hexen-3-ol a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on 1-Hexen-3-ol. |
