Flavonoid-3-o-glycosides are phenolic compounds containing a flavonoid moiety which is O-glycosidically linked to carbohydrate moiety at the C3-position. 2''-galloylastragalin is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). 2''-galloylastragalin can be found in japanese persimmon, which makes 2''-galloylastragalin a potential biomarker for the consumption of this food product.
