These are phenolic compounds containing one anthocyanidin moiety which is O-glycosidically linked to a carbohydrate moiety at the C5-position. Thus, peonidin 3-sophoroside 5-glucoside is considered to be a flavonoid. Peonidin 3-sophoroside 5-glucoside has been detected, but not quantified in, root vegetables and sweet potatos (Ipomoea batatas). This could make peonidin 3-sophoroside 5-glucoside a potential biomarker for the consumption of these foods. Based on a literature review a significant number of articles have been published on Peonidin 3-sophoroside 5-glucoside.
