Organic carbonic acids are compounds comprising the carbonic acid functional group. Hydrogen carbonate is a very weakly acidic compound (based on its pKa). Hydrogen carbonate has been detected, but not quantified in, several different foods, such as common oregano, wild celeries, mammee apples, muskmelons, and pot marjorams. This could make hydrogen carbonate a potential biomarker for the consumption of these foods.
