DescriptionCinnamoyltyramine is a member of the class of compounds known as cinnamic acid amides. Cinnamic acid amides are amides of cinnamic acids. Cinnamic acid is an aromatic compound containing a benzene and a carboxylic acid group forming 3-phenylprop-2-enoic acid. Cinnamoyltyramine is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). Cinnamoyltyramine can be found in a number of food items such as babassu palm, savoy cabbage, dill, and quinoa, which makes cinnamoyltyramine a potential biomarker for the consumption of these food products.
