DescriptionPurslane, Portulaca oleracea, is an annual succulent plant native to Europe, North Africa, and Asia. It is widely consumed in these regions, as well as in the Middle East and Mexico. The stems, leaves, and flower buds are edible and can be eaten raw or cooked, often used in salads, stir-fries, soups, and stews. Purslane has a slightly sour and salty taste, with a high water content of 93%. It is rich in vitamins A, C, and E, and minerals like calcium and iron, providing several health benefits, including antioxidant and anti-inflammatory properties (PMID: 38447616). The most notable chemical in purslane is malic acid. Purslane has been used in traditional medicine for various purposes, including treating fever and inflammation (PMID: 30327154). A peculiar mode of preparation involves boiling the leaves and stems to remove excess moisture, then sautéing them with garlic as a side dish.
