Green bell peppers are characterized by their green color, sweet taste, and mild odor. They are rich in vitamin C and vitamin B6, providing several health benefits, including immune system support and heart health. The most notable chemical in green bell peppers is vitamin C (PMID: 33337034). In addition to its culinary uses, green bell pepper is also used in traditional medicine to treat various ailments (PMID: 36255140). Interestingly, green bell peppers are typically picked before they ripen and turn color, and are often eaten raw or lightly cooked to preserve their crunchy texture.
