DescriptionStigmast-7-en-3-ol, also known as stigmast-7-enol, (3beta,5alpha,24s)-isomer or schottenol, belongs to stigmastanes and derivatives class of compounds. Those are sterol lipids with a structure based on the stigmastane skeleton, which consists of a cholestane moiety bearing an ethyl group at the carbon atom C24. Stigmast-7-en-3-ol is practically insoluble (in water) and an extremely weak acidic compound (based on its pKa). Stigmast-7-en-3-ol can be found in common walnut, robusta coffee, and tea, which makes stigmast-7-en-3-ol a potential biomarker for the consumption of these food products.
