It is commonly consumed in Mediterranean countries, particularly in Greece and Italy. The fresh herb is used as an aromatic condiment, and its leaves have a lightly bitter taste and an intense minty aroma. Hyssop is used to flavor liqueurs, such as absinthe, and is also used in cooking, albeit in moderation. The herb is believed to have soothing, expectorant, and cough suppressant properties, making it a popular herbal medicine. The most notable chemical in hyssop is pinocamphone, a monoterpene (PMID: 40670696). In addition to its culinary and medicinal uses, hyssop is also used in the production of perfumes and fragrances (PMID: 31694395). A peculiar mode of preparation involves steeping the leaves in hot water to make a tea, which is often used to relieve respiratory issues.
