DescriptionThe peach (Prunus persica) is a deciduous tree native to the Zhejiang province of Eastern China. It is widely consumed in many countries, particularly in the United States, China, and Italy. The fruit is juicy, fleshy, and sweet, with a yellow or orange color and a distinctive aroma. Peaches are a versatile ingredient, used in baked pies, cakes, desserts, and savory dishes, including those with pork, chicken, or seafood. They can be eaten raw, with or without skin, or used to make jams, marmalades, chutney, and savory sauces. Peaches are also a good source of nutrients, with raw peach flesh comprising 89% water, 10% carbohydrates, 1% protein, and negligible fat. The most notable chemical in peaches is amygdalin, a cyanogenic glycoside. Peaches have various health benefits, including antioxidant and anti-inflammatory properties (PMID: 33858290, PMID: 32186769). In addition to its culinary uses, peach kernel oil is used in traditional medicine and as a moisturizer in cosmetics. A peculiar aspect of peach preparation is the use of a specialized tool to remove the pit, or stone, from the fruit.
