| Description | Winter squash, Cucurbita maxima, is an annual fruit native to North America. It is widely consumed in the United States, Canada, and Europe. The culinary uses of winter squash include roasting, steaming, baking, frying, and incorporating into stews, soups, curries, gratins, casseroles, pasta, pies, cakes, and pastries. The flesh is tender and sweet, with a caramelized exterior when roasted. The color of winter squash varies from yellow to orange to dark green, with a sweet, nutty taste and a mild, earthy odor.
