The flesh is tender and sweet, with a caramelized exterior when roasted. The color of winter squash varies from yellow to orange to dark green, with a sweet, nutty taste and a mild, earthy odor. The most notable chemical in winter squash is beta-carotene. Winter squash has medicinal uses, including treating digestive issues and inflammation.
