Description"The burbot (Lota lota) is a freshwater fish native to Europe and Asia, but is also found in North America, particularly in the mainland waters of the Northwest Territories (PMID: 37451526). It is widely consumed in Europe, especially in Finland, where it is considered a delicacy. The burbot has a mild flavor with a subtle sweet undertone, resembling haddock or cod, and a firm, buttery texture with tender white flakes. It is an excellent source of protein and Vitamin A, with its liver being particularly rich in the latter. The fish is often referred to as ""poor man's lobster"" due to its similar taste and texture. It is commonly boiled or steamed and served with melted butter. The most notable chemical in burbot is protein, which is essential for building and repairing body tissues. The fish has no medicinal uses, but its liver is sometimes used as a source of Vitamin A (PMID: 37901224). A peculiar mode of preparation is to cut the fish into large chunks and serve it with melted butter as a dipping sauce."
